Question 2 Questions

How do I delete Music and Video files off of my computer and keep them on my Zune?

Second Microsoft video files have information/descriptions about videos. Is there a way I can add descriptions to the videos that I made for my Zune?

For #1, go to device settings and have it forget your computer, then sync it as guest. You'll have all the same functions as previously, but without the auto-updating. I can't help you out with #2, sorry.

I'm sure it can be done using a meta editor, I'll give it a test (post back later).
