As a fun fact, Link IS left handed in Twilight Princess in the original version for Gamecube. The reason he is right handed in the Wii version is because when they ported it, they mirrored the entire game to give it a different feel than the Gamecube version.
Luckily Skyward Sword won't have map mirroring. The main reason they had to do it was because they (if I remember right) started the game on the Gamecube first, but then decided to move over to the Wii, and had to mirror it in order for it to work properly. Btw using left handed link technically means you use the wii remote with your left hand. I dunno about you, but even though I'm left handed, using the wii remote with my left hand just doesn't work if I'm using a nunchuk with it.

I was pretty sure it was mirrored due to them switching his sword hand due to the hand you hold the Wii remote in. And I thought you could choose?

I always use the Wii remote in my left hand, even for FPS games. Feel much better for me.

Researching it, that is why. They didn't have enough time to rework the model of link so they decided to flip the game to suit right handers, which is the majority. You can't switch the sword hand in Twilight Princess though.
