They're all my favorite , but if I had to choose one it would be Toy Story. To be honest, I love them all for different reasons. I'm not a huge fan of Cars, but I want to watch it again to be sure. Otherwise, they're all perfect!
It's quite the tossup, but I'd have to say Wall-E. It incorporates such a deep dystopian atmosphere while still managing to retain the childish charm that makes Pixar movies what they are.

If I could pick one to watch right now, it would be Monsters Inc since I haven't seen it in years. But Its impossible for my to choose a Favorite. That said, I hated Finding Nemo.
Oh~~ My Favorite Short film by Pixar is "Partly Cloudy" which played before UP!. It rocks.
Toy Story
Monsters Inc.
The Incredibles
Bugs Life(I have an emotional bonding with this movie)
Finding Nemo
Ratatouille's my favorite recent movie from them.
Some Pixar shorts.
