I don't know of any way. You can create folders in the Zune auto-sync library for Pictures and for Videos. WIth Pictures the Zune seems to allow seperate folders but with the Videos, the Zune puts them all into one folder on the device (sorted alphabetically). Sorry, the only way I know of to organize is by naming everything so they appear the way you want. Maybe a future firmware upgrade will offer the feature.
