Can you expand on this a bit? I know the UI and loading the level is slow, I have been working on a fix for that. Does it randomly lockup in game? Are you running through visual studio? Have you tried deploying Release configuration, restarting the zune and then playing?
I am having trouble reproducing what you have mentioned except after debugging for a long time.

What do you mean? Too easy, too hard? I made it ramp up at the end quite a bit since there are only three levels right now.
