Blintz? I love those things! here is the recipe I use for them, I got it from a Martha Stuart recipe book. This is NOT my entry I am simply posting it for Nathan.
Introduction
A blintz is a crepe stuffed with a cheese mixture and then fried if desired.
Instructions
Difficulty: Moderately Easy
Things You'll Need
* Groceries
* Measuring Cups
* Measuring Spoons
* Mixing Bowls
* Skillets
* Wire Whisks
* 3 large eggs
* 1/2 c. milk
* 1/4 c. oil
* 1 c. flour
* 2 tbsp. sugar
* dash of salt
* 1/4 c. water
* 8 oz. cream cheese
* 8 oz. cottage cheese
* 1 tsp. butter
* 8 tbsp. (1 stick) butter
* applesauce, fruit-pie filling or sour cream

Step One
Place, in a large bowl, three large eggs, 1/2 c. milk, 1/4 c. oil, 1 c. flour, 2 tbsp. sugar, a dash of salt and 1/4 c. water.

Whisk together all ingredients. It should be a thin batter.

Add a bit more flour if you want a thicker, more controllable batter.

Let the batter rest.

Use another bowl for the filling. Mix 8 oz. cream cheese, 8 oz. cottage cheese, 2 tbsp. sugar, a dash of salt. Allow to warm to room temperature.

Mix until smooth and well-blended.

Place a frying pan on a stove burner until it becomes very hot.

Add a teaspoon of butter to the pan and rotate the pan off and on the heat so that the butter coats the bottom.

Use a ladle to drop enough of the batter into the frying pan to cover the bottom.

Rotate the pan so that it's covered with batter.

Drain off the excess.

Allow the batter to cook until the center bubbles and the crepe slides in the pan.

Place in a plate.

Add a tablespoon of filling and wrap the blintz: fold the sides in first, then one end and then the other end (like an envelope).

Place the blintz edge-side down on a plate to cool.

Use the remainder of the batter to make individual blintzes. When all are made, place a stick of butter in the frying pan and let it melt.

Fry all the blintzes until they're golden in color.

Place them on a paper towel to drain.

Serve with applesauce, fruit-pie filling or sour cream.
